Ingredients

  • 2 cups flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 tbsp sugar
  • 3 eggs, separated
  • 2 oz unsalted butter, melted
  • 2 cups buttermilk, room temperature

Equipment

  • Mixing bowl
  • Wooden spoon
  • Non-stick cooking spray
  • Waffle iron
  1. Combine the dry ingredients
  2. Whisk together the egg yolks, melted butter, and buttermilk.
  3. Beat the egg whites until stiff peaks form.
  4. Add the egg yolk mixture to the dry ingredients, whisking until smooth.
  5. Fold in the egg whites to the waffle batter.
  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. Spoon the waffle batter onto the waffle iron. The amount you'll use will vary depending on the waffle iron, but is usually around a third of a cup.
  3. Cook until the waffle is brown and separates easily from the waffle iron. The waffle iron may have a light that indicates when the waffle is done,. You'll notice less steam escaping from the waffle as it cooks.
  4. Some waffle irons need to be flipped. Total cooking time will range from 2-4 minutes per waffle.
  5. Serve with butter and maple syrup.
