How to Make Blueberry Waffles

Ingredients

  • 3 eggs
  • Blueberries
  • 8 tbsp butter
  • 2 cups white unbleached flour
  • 1/4 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 2 cups buttermilk
  • 1 tsp vanilla
  • Nutmeg

Equipment

  • Mixing bowls
  • Wooden spoon
  • Nonstick cooking spray
  • Waffle iron
  1. Combine the dry ingredients in a medium mixing bowl and stir together.
  2. In a separate mixing bowl, whisk together the egg yolks (set aside whites), melted butter (slightly cooled), vanilla and buttermilk.
  3. Beat the egg whites until stiff peaks form. They will look fluffy, not glossy.
  4. Add the egg yolk mixture to the dry ingredients, whisking until smooth (some lumps are ok).
  5. Fold in the egg whites to the waffle batter. Make sure your spatula goes all the way down to the bottom and flip the batter up over the whites so that they stay fluffy.
  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. Spoon the waffle batter onto the waffle iron. The amount you'll use will vary depending on the waffle iron, but is usually around a third of a cup.
  3. Add your blueberries on top. You can also sprinkle some nutmeg in the batter if you want.
  4. Cook until the waffle is brown and separates easily from the waffle iron. The waffle iron may have a light that indicates when the waffle is done,. You'll notice less steam escaping from the waffle as it cooks.
  5. Some waffle irons need to be flipped. Total cooking time will range from 2-4 minutes per waffle.
  6. Serve with butter and maple syrup.
